In 1884 Master Cutler Karl Elsner started his cutlery factory in Ibach, Switzerland and in 1897 he crafted the Victorinox Original Swiss Army Knife. Since that time the Elsner family has continued to craft tools of percision, durability and quality. Victorinox is one of the largest producers of cutlery in the world. Victorinox cutlery has been distributed in the United States since 1884 to culinary professionals under the brand name R.H. Forschner. Each blade is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished. Straight grain oak block offers slanted design for easy access and 9 slots. Included are 4-inch Parer, 6-inch Boning, 8-inch Bread, 8-inch Chef's, 10-inch Slicer, 10-inch Sharpening steel and Kitchen Shears

5Great knives at a great valueAug 25, 2007

I was using a Wustof Classic chef's knife to do everything in the kitchen, and wanted a set of "beater" knives that would provide some other functions, and also so I wouldn't yell at guests for mistreating the Wustof. I chose the Victorinox set over lower priced sets such as Chicago cutlery because nearly every knife in this set was rated #1 (over much fancier knives) by Cook's Illustrated. In fact, when Cook's Illustrated rated knife sets, I guess victorinox didn't have one available, and their recommendation was to buy a block and populate it with Victorinox models.
In a head to head comparison with the Wustof, the Victorinox chef's knife was a few ounces lighter, and the balance was more blade heavy. The Victorinox out of the box was as sharp as the Wustof, which is about halfway between professional sharpenings. that is to say, the victorinox is impressive right out of the box. The slightly different balance takes a little getting used to if you've been using big german steel all your life, but it's not bad. The victorinox has a great handle design and is better for two handed mincing.
The selection of the knives in this set is perfect. there are no useless knives to pad the number in the set, this has everything you'd need except a cleaver. It also offers a 10" slicer instead of the 8" slicer offered by chicago and other, cheaper sets, and has very good quality shears.
It's hard for me to think of these as beater knives now, until I remember the price. If I accidentally burn my place down and have to get new knives, I would probably just buy this set and not replace the Wustof, then maybe add in a cleaver and the 5" mini chef's knife from Victorinox.
These knives are an incredible value.

These knives feel very good in your hands. The Fibrox has a texture that helps you maintain a firm grip even if your hands are damp. The Chef's knife cuts through vegetables like they aren't even there. Knowing that I didn't have to pay an arm and a leg for this set makes me even happier.

i love a sharp knife and when i travel to Europe i always bring back at least one knife

A quick review: I chose this knife set based on the reviews by Cooks Illustrated. Their reviews seems fair, thoughtful, and well-tested. The knives are incredible. I haven't ever had a decent set in my life and this was my moment to splurge on a set. A remarkable price for the set and impressive reviews by all!

purchased this knife set about a month ago and have only one real complaint and that being that the knife block didn't have any extra slots for steak knives. the knives that came with the set are really great. have never really owned a decent set of knives before and am really pleased with this set. my first real use was in making clam chowder that calls for salt pork. the french knife cut through the salt pork like cutting through a stick of butter. have always had to fight through the pork back with the cheap knives that i have owned. no more!!!! :))
