A special tempering process is used to produce an edge that can be resharpened over and over again, so the knife can keep its original sharpness throughout the entire life of the blade. Victorinox handles are ergonomically designed to minimize wrist tension. They provide a natural fit. A good heft and comfortable, positive grip are indications of a well-made knife. A sure-grip handle with a finger guard is valuable feature since the handle inevitably gets greasy, wet, or both. Although cutlery steel is naturally sanitary, materials and construction details of the handle minimize crevices what would offer hospitality to bacteria. | | | Features: | |

Nice weight and shape, but get's dull quicklyJul 07, 2010 This Victorinox 8-inch Carving Knife is a nice weight and shape, but it didn't seem all that sharp right from the beginning. Within a few uses, it seemed to get even duller. I didn't think I was going to have to sharpen it any time soon, but I was definitely wrong. I've bought 3 Victorinox knives trying to save money, but they all have the same issue. I wouldn't recommend this brand. I guess you get what you pay for.

great cutleryJan 27, 2010 I am a long time user of Victorinox Cutlery and started a set for my son. They are a little more expensive, but well worth the price. I have had my set for close to 20 years and still keeps a sharp edge.

LOVE THESE KNIVES!Jan 03, 2010 I have purchased 5 of these knives so far and love everyone of them. You will not be disappointed if you buy. They are sharp and seem to remain sharp...but I hand wash them as recommended and have them in a very good block in the drawer. I'm sure they will have to be sharpened at some point in time but not anytime soon.

8" craving knifeDec 15, 2009 The knife is good for carving roasts. The blade is a little thinner than I thought.
I have had it for a month now and it is still sharp.

Great ValueMay 20, 2009 I have several different knives from this line. All the knives are lightweight yet well-balanced, and feel just great in the hand. They are very reasonably priced, too. They resharpen very well. I doubt I will ever buy another brand.
